Invented in the mid-20th century by the German chemist Peter J. Schlumbohm, the so-called Chemex coffee maker has a special place for those who enjoy clean, bright coffee with sweet notes. Simple and elegant, the Chemex is used with heavy paper filters that better retain the oils suspended by the coffee during the extraction process.

What you need

  • Chemex coffee maker.
  • Heavy paper filter. 
  • 30 grams of ground coffee from Coffee Tellers Co (medium grind). 
  • 490 milliliters of water.

How to make:

  • Clean the paper filter by allowing some hot water to run before starting preparation.
  • Add 6 tablespoons (30 grams) of Coffee Tellers Co ground coffee in the filter and add 70 ml of water at 92º. Let the mixture sit for 45 seconds.
  • Add 6 tablespoons (30 grams) of Coffee Tellers Co ground coffee in the filter and add 70 ml of water at 92º. Let the mixture sit for 45 seconds.
  • Stir the coffee a bit in the Chemex, pour it into a cup and enjoy.

Tip

Make a small hole in the coffee before pouring the water so the infusion is more uniform in all coffee grains.

Warning

If the coffee grind is very delicate the water stagnates; if the grind is very coarse, the dripping is very fast. Conclusion: grind should be neither too fine nor coarse.

Fun fact

Peter J. Schlumbohm, the creator of the Chemex coffee maker, registered more than 3,000 patents, but this coffee maker was without a doubt his best-known invention.
